Potato Latkes

Ingredients:

  • 2 pounds russet potatoes, peeled

  • 1 medium onion

  • 1/2 cup chopped green onions

  • 1 egg, lightly beaten

  • 1 teaspoon salt

  • 1/4 teaspoon pepper

  • oil for deep-fat frying

  • applesauce

Directions:​​

  1. Coarsely grate potato and onion, drain any liquid. Place in a bowl, add green onions, egg, salt and pepper.

  2. In an electric skillet, heat 1/8 in. of oil to 375 degrees. Drop in potato mixture by spoonfuls. Flatten to form patties and fry until they are golden-brown; flip to cook on other side. Drain on paper towels. Serve with applesauce if desired.
